What can be better this summer than a strawberry vanilla tart or forest fruits, anything you can find at the (super)market. The tart dough is the base, the rest you can improvise, it’s like pizza and toppings 🙂 tart 4   I have used the same classic recipe, which you can find here. You will also need 500g strawberries or other forest fruits and to this you should add the most easy to make and most delicious vanilla cream: 300ml milk, 2-3 tablespoons sugar, 1 tablespoon corn flour, 1 vanilla bean, 10g vanilla sugar and 3 large eggs. I started by mixing the dough and while it cooled in the fridge I prepared the vanilla cream, which I almost ate all before the tart was ready for assembly, of course, together with the wonderful strawberries. Anyway, I put the milk in a pan on medium heat with the content of the vanilla bean and then I added the yolks, which I have previously mixed with the vanilla sugar, sugar and corn flour, and then I continued to stir until all these ingredients turned into creamy vanilla. I then removed the pan from the heat and let it cool while the tart was in the oven. So, meanwhile I put the tart dough in the oven, but before I put on it a sheet of baking paper and beans to keep it under pressure and not rise during baking. tart 1 I kept the beans for about 25 min at 200degrees and then removed them so that the tart gets crunchy and has a nice colour and left baking for another 20 min. After I have taken the tart from the oven I left it again cool and then I added the vanilla cream and cut the fruits and added on top of the vanilla cream. All goes in the fridge to cool and set nicely, then it’s ready! Easy or what? Hope you will try it as well, I for sure will bake more of them this summer. tart 3 tart 2
